INGREDIENTS
- 2 tablespoons olive oil
- 300 g chicken breasts
- 70 g white onion (finely chopped)
- 1 tablespoon cane sugar
- 500 g peeled chopped tomatoes
- 1 teaspoon dried oregano
- 150 g mozzarella (sliced)
- 70 g grated Parmesan

METHOD
- 1First, preheat the oven to 200–210 °C and prepare a baking dish (30 × 40) cm.
- 2Wash and clean the chicken breasts, season with salt and pepper. Heat 1 tablespoon of olive oil in a pan over medium heat. Once the oil is hot, add the chicken breasts to the pan and sear for 2–3 minutes on each side over medium heat. Remove the seared chicken breasts from the pan and set aside on a work surface.
- 3Pour the second tablespoon of oil into the pan, add the finely chopped onion and sauté over medium heat for 2 minutes. Then reduce the heat to low, add the cane sugar, tomatoes, dried oregano, salt, and pepper, and simmer everything together for 3–4 minutes.
- 4Transfer the finished tomato mixture to the baking dish. Place the seared chicken breasts on top of the mixture, add mozzarella slices, and sprinkle everything with grated Parmesan. Place the baking dish into the preheated oven and bake for 13–15 minutes at 200–210 °C.
- 5Divide the finished Parmesan chicken among 3 plates and serve with any side dish.
