In a larger bowl, mix the wholemeal spelt flour, diced butter, and a pinch of salt. Set the resulting dough aside.

Preheat the oven to 170 °C. Heat the olive oil in a pan, sauté 2 finely chopped shallots in it for 1-2 minutes. Add the washed spinach leaves and cook for another 3 minutes.

Whisk the sautéed spinach with the eggs, a pinch of salt, pepper, milk, and cottage cheese.
