INGREDIENTS FOR DOUGH
- 300 g wholemeal spelt plain flour
- 40 g coconut oil (solid state)
- 100 ml rice milk
- 175 g semi-fat quark
- 1× egg yolk
- Pinch of salt
INGREDIENTS FOR FILLING
- 250 g fresh strawberries
- 2 tablespoons coconut sugar
INGREDIENTS FOR GARNISH
- 50 g coconut oil in solid state
- 1 teaspoon honey
- 1 teaspoon Dutch cocoa

INSTRUCTIONS
- 1Fill a large pot halfway with water and bring to a boil.
- 2In a bowl, mix the ingredients for the dough.
- 3Coat the strawberries in coconut sugar and wrap each strawberry in a portion of the dough.
- 4Submerge the dumplings in the pot of boiling water and wait until they float to the surface (approx. 5 minutes).
- 5Melt the coconut oil together with honey in a saucepan over low heat (this will take approx. 1–2 minutes).
- 6Divide the finished strawberry dumplings among 4 plates, drizzle with coconut oil and honey, and serve sprinkled with cinnamon or Dutch cocoa.
Tip
You can sprinkle the dumplings with quark, or a few fresh mint leaves. If you have a sweet tooth, sweeten the dumplings to taste with powdered stevia.
