Dice the onion, carrot, celery stalks, and garlic into fine cubes with 3 mm sides.

In a saucepan over high heat, warm half of the oil, add the diced carrot and celery stalks, and sauté for 2 minutes until golden. Add the onion and garlic and sauté for another 2 minutes.

Add the meat, salt, pepper, bay leaf, three-quarters of the oregano and thyme, and sauté for 2 minutes, stirring constantly. Pour in the wine and stir for 1 minute.
