INGREDIENTS

  • 80 g whole oat flakes
  • 150 g wholemeal spelt plain flour
  • 2 size M eggs
  • 40 g cane sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 100 g fresh strawberries
  • 170 ml water

INSTRUCTIONS

    Preheat the oven to 195–200 °C and line a 12-muffin baking tray with paper liners.

    In a large bowl, combine the oats, flour, eggs, sugar, water, baking powder, and vanilla extract and mix. Dice the strawberries into small cubes and carefully fold them into the batter. Fill the paper liners two-thirds full with batter and bake for 25–30 minutes at 195–200 °C.

    Let the baked muffins cool in the pan for about 15 minutes, then remove them and let them cool for another 30 minutes.
