INGREDIENTS
- 80 g whole oats
- 150 g whole grain spelt flour
- 2 medium eggs
- 40 g brown cane sugar
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 100 g fresh strawberries
- 170 ml water
INSTRUCTIONS
- 1Preheat the oven to 195–200 °C and line a 12-cup muffin tin with paper liners.
- 2In a large bowl, combine oats, flour, eggs, sugar, water, baking powder, and vanilla extract. Cut the strawberries into small cubes and gently fold them into the batter. Fill the paper liners ⅔ full with the batter and bake for 25–30 minutes at 195–200 °C.
- 3Let the baked muffins cool in the tin for about 15 minutes, then remove them and let cool for another 30 minutes.
