INGREDIENTS

  • 100 g courgette
  • 50 g carrot
  • 40 g red bell pepper
  • 120 g small potatoes
  • 60 g oyster mushrooms
  • 30 g butter
  • 5 g chili pepper
  • 1 spring onion
  • 1/2 lemon
  • 1 clove garlic
  • 1 larger sprig of thyme
  • 1 tablespoon olive oil for serving
  • freshly ground pepper
  • salt
  • 2 bone-in chicken thighs with skin, 200 g each

WINE PAIRING

  • This dish tastes best with medium-bodied, white, and rosé wines.

    Preheat the oven to 185 °C.

    Debone the chicken thighs and cut each into 4 equally sized pieces, season with salt and pepper.

    Trim the ends off the courgettes. Clean the carrots. Remove seeds from the bell pepper and chili pepper. Halve the potatoes, and if they are new, leave the skin on. Finely chop the chili pepper, cut the rest of the vegetables into 1.5 cm cubes.

    Cut the green part of the spring onion into 2 cm pieces, finely chop the white part. Cut the lemon lengthwise into two halves. Peel and finely chop the garlic. Clean the oyster mushrooms and cut them into 2 x 2 cm pieces.

    In a casserole dish over medium heat, melt the butter, place the chicken skin-side down and cook for 2 minutes until golden. Add the potatoes and carrots, turn the meat over and cook for another 2 minutes on the other side.

    Add the green part of the spring onion and garlic, stir and add the courgette, bell pepper, chili pepper, lemon, and thyme. Season with salt and pepper and sauté, stirring occasionally, for another 2 minutes. Finally, add the oyster mushrooms and sauté everything for another 2 minutes.

    Remove from heat, cover with a lid and place in the preheated oven. Bake for 12 minutes. Serve drizzled with 1 tablespoon of oil and sprinkled with the white part of the spring onion.
Tip
For preparation, you will need an oven-safe casserole dish with a lid.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
