INGREDIENTS
- 1 trout weighing 450 g
- salt
- pepper
- 1 teaspoon caraway
- 60 g plain flour
- 20 g butter
- 40 g clarified butter
- 2 larger sage leaves

INSTRUCTIONS
- 1Preheat the oven to 180 °C.
- 2Trim the fish's fins with scissors. Wash it under cold running water and dry thoroughly. Season it with salt and freshly ground pepper on all sides and inside. Then coat it in plain flour. Shake off any excess flour. Insert sage inside the fish and sprinkle the fish with caraway.
- 3In a non-stick pan over medium heat, melt the clarified butter, place the fish in it and fry it until golden brown on each side for 2 minutes.
- 4Place fresh butter on the prepared fish, put it on baking paper, place it on a baking sheet, and put it into the preheated oven. Bake for 5 minutes.
