Peel the potatoes and cut them into fries. Place them in a pot with hot water, salt, and cook for 10 minutes over low heat. Drain the fries and let them dry. Then, salt them, drizzle with 1 tablespoon of oil, carefully mix, and transfer to a baking sheet with parchment paper. The fries should lie separately to bake properly.
Clean the fillets, remove bones with tweezers, and cut into pieces. Salt them, coat in spelt flour, then in beaten and salted egg, and finally in corn breadcrumbs. Place them on a baking sheet with parchment paper.
If you have a convection oven, place both baking sheets into the oven and bake for 20 minutes at 200°C. Turn the fillets halfway through, stir the fries so they bake on all sides. Remove the fillets and increase the temperature to 220°C and bake the fries for another 10 minutes. You can stir them once more.
