- 300 g fresh salmon
- 40 g breadcrumbs
- 1 egg
- 1 spring onion
- 4 tsp Dijon mustard (1 for the balls, 3 for the sauce)
- salt to taste
- freshly ground pepper
- oil for frying and spraying
- 1 yellow onion
- 200 ml vegetable broth
- 80 g cream cheese (žervé)
- 100 ml cooking cream 12%
- mashed potatoes for serving
Preparing the balls
Preheat the oven to 190 °C (top and bottom heat). Skin the salmon, cut it into cubes, and briefly chop it in a blender. Add the egg, breadcrumbs, and chopped spring onion. Season with salt and pepper. Mix well and form into balls, placing them on a baking sheet lined with baking paper. Spray with oil and bake for 15–18 minutes.
Preparing the sauce and serving
Finely chop the onion. Heat the oil in a pan and sauté the onion until translucent. Add the broth and the remaining sauce ingredients (cream cheese, cream, mustard). Warm through and blend with a hand blender. Continue to simmer the sauce over low heat and reduce to the desired thickness. Serve the balls with the sauce and mashed potatoes.
