INGREDIENTS
- 300 g redfish fillets
- 10 g aged cheese (e.g., Grana Padano)
- 20 g whole grain breadcrumbs
- 20 g olive oil
- Handful of fresh herbs (chives, basil, parsley)
- Pepper
- Salt
- Lemon for serving
SIDE DISH
- 400 g potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt

INSTRUCTIONS
- 1Turn on the oven to 220 °C for top and bottom heat.
- 2Wash the potatoes and cut them into sixths. Place water in a pot on the stove to boil, and once hot, carefully add the potato pieces and boil for 5 minutes. Then drain the water, let the potatoes drain, and arrange them on a baking tray lined with baking paper. Drizzle with oil, lightly salt, and bake for 25 minutes. Stir halfway through. If the potatoes do not brown to the desired color in the given time, turn on the oven to grill function on medium heat and bake for another 3 minutes.
- 3For the herb crust, mix grated cheese, breadcrumbs, olive oil, and finely chopped herbs.
- 4Pat the fish dry with a paper towel, then salt and pepper it. Place baking paper on a baking tray, then the fillets on top, onto which layer the herb crust and press down firmly.
- 5Place the baking tray into the preheated oven at 200 °C and bake for 12 minutes.
