INGREDIENTS FOR CALAMARI TENTACLES
- 360 g calamari tentacles
- 1 pc onion
- 1 pc carrot
- 1 pc root parsley
- ½ pc leek
- 3 peppercorns
- 3 allspice berries
- 1 teaspoon salt
INGREDIENTS FOR SALAD
- 1 red onion
- 100 g yellow pepper
- 100 g red pepper
- ½ small zucchini
- 10 pcs black olives
- 10 pcs cherry tomatoes
- 100 g couscous
- 50 g mixed leafy salad
- 2 tablespoons olive oil
- ½ handful flat-leaf parsley
- Juice from ½ lemon
- ¼ teaspoon salt
- Pinch of ground pepper
INSTRUCTIONS
- 1Place the tentacles and cleaned vegetables into a pot. Pour in 3 l of water and cook over low heat for approximately 1 hour. Once a knife passes through the meat without resistance, it is cooked.
- 2Pour 200 ml of hot water over the couscous, cover, and let stand for a few minutes.
- 3Meanwhile, prepare the salad. Clean the vegetables and cut them into smaller cubes. Leave the olives whole, and cut the tomatoes in half.
- 4Pour a tablespoon of oil into a pan and sauté the vegetables for about 2 minutes.
- 5Remove the tentacles from the batch, pat dry with a paper towel, and briefly grill on each side in a grill pan with a drop of olive oil. Cut the meat into 1 cm pieces and add them to the vegetables. Season with salt and ground pepper.
- 6Layer couscous, leafy salad, and then sautéed vegetables with calamari pieces onto a plate. Drizzle with lemon juice and olive oil.
