INGREDIENTS

  • 400 g sardines
  • 1 tablespoon olive oil
  • Sprig of thyme
  • Sprig of rosemary
  • 1 chili pepper
  • ½ lemon
  • Salt
  • 4 grilling skewers
  • 1 grilling tray
  • 2 slices sourdough bread
  • 1 vine of cherry tomatoes
  • 100 g sour cream

INSTRUCTIONS

    Wash and dry the sardines. For larger sardines, remove the entrails. This is easy to do, as the abdominal cavity is thin; just make a gentle incision and pull out the entrails. Work carefully to avoid tearing the delicate flesh.

    Strip the leaves from the thyme and rosemary sprigs and chop them finely. Wash and dry the lemon, then grate the zest from half of it using a fine grater. Mix the spices and lemon zest.

    Thread the sardines onto grilling skewers and sprinkle with the spice mixture. Refrigerate to rest; the longer, the better, for at least 1 hour.

    Before grilling, drizzle the sardines with olive oil.

    Heat the grill and grill the sardines on both sides. Smaller pieces need about a minute and a half, larger ones two minutes per side. Also add cherry tomatoes and slices of bread drizzled with olive oil to the grill and toast them.

    For the dip, mix sour cream with 1 teaspoon of lemon juice. Season with salt and pepper.
