Preparation method

Pour both flours onto a work surface. Make a well in the center, crack the eggs into it, and add the oil. First, whisk the eggs with a little flour using a fork, then start working the dough with your hands. Knead until the dough comes together. The dough will have a stiffer consistency. Form a ball, wrap it in cling film, and refrigerate for at least 30 minutes.

Meanwhile, prepare the filling. Finely chop the smoked salmon and mix it with ricotta, egg yolk, and chopped chives. Season with salt and ground pepper.

Also prepare the sautéed spinach. Wash the spinach leaves and sauté them in a pan. Add ricotta, season with salt, pepper, and crushed garlic.
