- 600 g chicken liver
- 2 onions
- 2 cm fresh ginger
- 3 cloves of garlic
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp rice vinegar
- 1 tsp cane sugar
- 300 ml chicken stock
- 2 tsp cornstarch
- 1 tsp salt
- freshly ground pepper

Clean the liver and cut it into smaller pieces. Peel the onion and slice it into strips. Also peel the ginger and garlic and chop them finely.

Pour a little oil into a pan and heat it up. Sauté the onion for about 3 minutes, add the garlic and ginger, and sauté for another minute. Set the vegetables aside. Pour a little oil into the pan. Add the liver and sear it on all sides. Season with soy sauce, fish sauce, vinegar, and sugar. Pour in the stock and bring to a boil.

Mix the cornstarch in a little water and add it to the pan. Simmer until the sauce thickens. Add the prepared vegetables back in. Season with salt and ground pepper. Serve with rice.
