INSTRUCTIONS
- 1Preheat the oven to 180 °C.
- 2Generously salt and pepper the chicken breasts on both sides.
- 3In a large pan, heat oil over high heat and sear the meat, skin-side down, for about 4 minutes until golden. Lightly press the meat against the bottom of the pan with a wooden spoon during searing to ensure the skin crisps evenly. Reduce heat to medium, flip the meat, and sear for 3 minutes until golden. Place the seared meat on a baking sheet and bake in the oven for 8 minutes.
- 4Transfer the cooked meat to a cutting board and let it rest for 6 minutes. Then slice it and serve immediately.
