INGREDIENTS FOR CALAMARI TENTACLES

  • 360 g calamari tentacles
  • 1 pc onion
  • 1 pc carrot
  • 1 pc root parsley
  • ½ pc leek
  • 3 peppercorns
  • 3 allspice berries
  • 1 teaspoon salt

INGREDIENTS FOR SALAD

  • 1 red onion
  • 100 g yellow pepper
  • 100 g red pepper
  • ½ small zucchini
  • 10 pcs black olives
  • 10 pcs cherry tomatoes
  • 100 g couscous
  • 50 g mixed leafy salad
  • 2 tablespoons olive oil
  • ½ handful flat-leaf parsley
  • Juice from ½ lemon
  • ¼ teaspoon salt
  • Pinch of ground pepper

INSTRUCTIONS

    Place the tentacles and cleaned vegetables into a pot. Pour in 3 l of water and cook over low heat for approximately 1 hour. Once a knife passes through the meat without resistance, it is cooked.

    Pour 200 ml of hot water over the couscous, cover, and let stand for a few minutes.

    Meanwhile, prepare the salad. Clean the vegetables and cut them into smaller cubes. Leave the olives whole, and cut the tomatoes in half.

    Pour a tablespoon of oil into a pan and sauté the vegetables for about 2 minutes.

    Remove the tentacles from the batch, pat dry with a paper towel, and briefly grill on each side in a grill pan with a drop of olive oil. Cut the meat into 1 cm pieces and add them to the vegetables. Season with salt and ground pepper.

    Layer couscous, leafy salad, and then sautéed vegetables with calamari pieces onto a plate. Drizzle with lemon juice and olive oil.
