INGREDIENTS
- 400 g sardines
- 1 tablespoon olive oil
- Sprig of thyme
- Sprig of rosemary
- 1 chili pepper
- ½ lemon
- Salt
- 4 grilling skewers
- 1 grilling tray
- 2 slices sourdough bread
- 1 vine of cherry tomatoes
- 100 g sour cream
INSTRUCTIONS
- 1Wash and dry the sardines. For larger sardines, remove the entrails. This is easy to do, as the abdominal cavity is thin; just make a gentle incision and pull out the entrails. Work carefully to avoid tearing the delicate flesh.
- 2Strip the leaves from the thyme and rosemary sprigs and chop them finely. Wash and dry the lemon, then grate the zest from half of it using a fine grater. Mix the spices and lemon zest.
- 3Thread the sardines onto grilling skewers and sprinkle with the spice mixture. Refrigerate to rest; the longer, the better, for at least 1 hour.
- 4Before grilling, drizzle the sardines with olive oil.
- 5Heat the grill and grill the sardines on both sides. Smaller pieces need about a minute and a half, larger ones two minutes per side. Also add cherry tomatoes and slices of bread drizzled with olive oil to the grill and toast them.
- 6For the dip, mix sour cream with 1 teaspoon of lemon juice. Season with salt and pepper.
