INGREDIENTS
- 600 g turkey breast
- 1 onion
- 1 red bell pepper
- 2 carrots
- 1 small zucchini
- 2 cm ginger
- 1 tablespoon oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons soy sauce
- 2 teaspoons cane sugar
- 550 ml chicken broth
- 20 g corn starch
- freshly ground pepper
- fresh coriander
FOR THE MARINADE
- 1 tablespoon oil
- 1 tablespoon Worcestershire sauce
- 2 tablespoons soy sauce
- 1 tablespoon sriracha
- 1 teaspoon cane sugar
- 1 teaspoon salt
INSTRUCTIONS
- 1For the marinade, mix oil, both sauces, sriracha, cane sugar, and salt.
- 2Cut the turkey breast across the grain into strips and place them in the marinade. Cover with cling film and refrigerate. Let marinate for 2 hours, or at least 30 minutes.
- 3Clean, wash, and cut the vegetables - onion into eighths, bell pepper into strips, carrots into slices (cut perpendicularly), zucchini into cubes, ginger finely.
- 4Heat oil in a pan, add vegetables and sauté for 5 - 7 minutes. Set aside, add a little more oil, and sear the meat over high heat. Cook the meat in batches; this amount should be cooked in 3 turns. Once the meat starts to whiten from the bottom, flip it and cook on the other side. This takes approximately one minute per side.
- 5Once all the meat pieces are seared, add broth and starch (mixed with a little water) to the pan and let it thicken. Season with balsamic vinegar, sugar, soy sauce, and pepper. Return the meat and vegetables to the pan. Heat through and season with salt if needed.
- 6Serve with rice and fresh coriander.
