- 240 g whole wheat pasta
- 400 g chicken breasts
- 1 tablespoon olive oil
- 1 small white onion (finely chopped)
- 1 clove garlic (crushed)
- 1 tablespoon tomato paste
- 1 can chopped tomatoes
- 1 teaspoon dried basil
- 2 tablespoons fresh chives (chopped)
- 150 g mozzarella (grated or sliced)
- Salt

Cook pasta in salted water for the time indicated on the package. Season chicken breasts with salt and pepper on both sides. Heat olive oil in a pan and sear the breasts (whole) on both sides – about 3 minutes on one side and 4 minutes on the other. Remove the breasts from the pan and set them aside for later.
Leave the pan on the hob, reduce the heat and sauté the chopped onion with crushed garlic in the remaining drippings for 2 minutes. Then increase the heat and add tomato paste. Stir and add chopped tomatoes, basil, and chives. Cook everything on medium heat for 5 minutes. If the tomatoes start to stick, add a little water.
Return the seared chicken breasts to the pan, pour the prepared tomato sauce over them, and top with mozzarella. Cover the pan with a lid and let it finish cooking on medium heat (about 3–4 minutes). Serve with cooked pasta.
