  • 12 large mushroom caps
  • 2 tablespoons of olive oil
  • 100 g couscous
  • 1 teaspoon of curry powder
  • 1 pinch of salt
  • 1 pinch of pepper
  • 50 ml coconut cream
  • 1 handful of fresh parsley
  • 50 g sunflower seeds
  • 100 g grated mozzarella

Preheat the oven to 190 °C. Spread the cleaned mushrooms on a baking sheet, drizzle with olive oil, and bake in the oven at 180–190 °C for about 5 minutes.

Meanwhile, mix the couscous, curry, salt, and pepper. Pour boiling water over everything, cover with a lid, and let the water absorb. Remove the mushrooms from the oven and set aside.

Stir the coconut cream, chopped parsley, sunflower seeds, and grated mozzarella into the couscous mixture. Fill the pre-baked mushrooms with the mixture and bake in the oven at 180–190 °C for another 10 minutes.
