- 200 g shrimp
- 150 g baby spinach
- 200 g grated mozzarella
- 1 small white onion
- 3 cloves of garlic
- 400 ml coconut milk
- 2 tbsp Dijon mustard
- 1 tbsp rapeseed oil
- 1 pinch of salt
- 1 pinch of pepper
Heat a tablespoon of oil in a deep pan, add 3 minced garlic cloves and fry for 1 minute. Add the shrimp to the pan and fry for 3-4 minutes.
Remove the shrimp from the pan and set aside. In the same pan, sauté the finely chopped onion. Sauté the onion for 3 minutes. Add the mustard to the pan, stir, pour in the coconut milk and let it simmer for 5-7 minutes.
Add the sautéed shrimp to the pan, add the spinach and stir. Finally, stir in the grated mozzarella and season the sauce with salt and pepper.
