Peel the onion and cut it into wedges. Cut the chicken breasts into smaller pieces and mix them with dried thyme, a pinch of salt, and pepper.
Heat 1 teaspoon of olive oil in a non-stick pan, add the chopped onion, and fry it for 1 minute over medium heat. Then add the chopped chicken breasts to the pan, reduce the heat to low, and fry for another 7–10 minutes.
While the chicken mixture is cooking, prepare the salsa. Dice the tomatoes finely and place them in a bowl. Finely chop the chilli pepper and fresh coriander and add them to the bowl with the tomatoes. Finally, add 1 teaspoon of olive oil, a pinch of salt, and pepper to the bowl and mix everything together.
