  • 4 baby zucchinis
  • 2 burratas
  • 2 tbsp of olive oil
  • 1 lemon (zest and juice)
  • a handful of fresh basil
  • salt to taste
  • pepper to taste
  • 50 g of pistachios or almonds (chopped)
  • 1 clove of garlic
  • chili flakes to taste

Slice the zucchini into thin strips using a potato peeler.

Heat the olive oil and crushed garlic in a large pan. Add the zucchini and sauté for 4–5 minutes so they remain slightly crunchy. Season with salt and pepper, add the grated lemon zest and a tablespoon of lemon juice. Finally, add the chili flakes.

Spread the warm zucchini onto a plate. Add the burrata, drizzle it lightly with olive oil and season with salt. Finally, sprinkle with fresh basil and chopped pistachios.
