Preheat the oven to 200 °C, top and bottom heat.

Peel and finely chop the onion and garlic. Heat the olive oil in an ovenproof pan and sauté until translucent.

Meanwhile, cut the zucchini in half lengthwise, cut each half lengthwise again, and slice into smaller pieces. Add to the pan and sauté. Once the zucchini is browned, add the chopped tomatoes, olives, and 100 ml of water.
