INGREDIENTS

  • 600 g chicken breasts (cut into pieces)
  • 2 large yellow onions (diced)
  • 1 tablespoon olive oil
  • 1 teaspoon sweet paprika powder
  • 700 g of any cooked rice (approx. 500 g dry)
  • 120 g sun-dried tomatoes (diced)
  • 1 medium broccoli (cut into small pieces)
  • 200 g cheddar (coarsely grated)
  • 2 handfuls of flat-leaf parsley (coarsely chopped)
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 200 °C and prepare a baking dish (40 cm × 25 cm).

    Place the chicken and onion in the dish, drizzle with oil, season with paprika, salt, and pepper, and mix to coat the chicken with the spices. Place in the preheated oven and bake for 10 minutes at 200 °C.

    Then remove the dish, add the rice and sun-dried tomatoes, and mix with the meat. Top with a layer of broccoli and press it into the rice, sprinkle with cheddar, and bake for 15–20 minutes at 180 °C.

    Before serving, sprinkle the dish with parsley leaves.
