First, prepare the vegetable mixture. Place all ingredients except the olive oil into a food processor or electric chopper and grind finely.

Then, heat 2 tablespoons of olive oil in a pan over medium heat. Shape the resulting vegetable mixture with your hands into any shape resembling a patty or schnitzel and fry in the heated pan over medium heat for 2-3 minutes on each side.

Divide the fried vegetarian vegetable schnitzels onto individual plates and serve.

Chef's tip

Serve the vegetarian schnitzels with sour cream and fresh chives.
