INGREDIENTS

  • 400 g fennel
  • 1 sweet apple
  • 2 oranges
  • 2 tablespoons finely chopped mint
  • 4 tablespoons olive oil
  • 4 handfuls arugula
  • juice of 1 lemon
  • ½ teaspoon granulated sugar
  • salt
  • pepper

WINE PAIRING

  • The salad's flavor is best highlighted when paired with fresh, light wines. Choose white or sparkling wines with juicy acidity.

INSTRUCTIONS

    Cut off the tops from the fennels, halve the bulbs lengthwise, remove the tough core, and then slice them into thin pieces, about 1–2 mm thick. Place them in a bowl of ice water for 10 minutes; this will make them crispier. Afterward, remove them and let them drain in a colander.

    Core the apple and slice the flesh into thin pieces.

    Peel the oranges and cut out individual segments. Squeeze the juice from the remaining pulp into a bowl.

    In a bowl, combine all ingredients and mix. Season with a pinch of salt and freshly ground pepper and mix.
