SALAD INGREDIENTS
- 1 kg of tomatoes of various kinds, colors, and sizes
- 50 g peeled red onion
- 10 g flat-leaf parsley leaves
- 1 teaspoon salt
DRESSING INGREDIENTS
- 50 g white wine vinegar
- 50 g granulated sugar
- 75 g olive oil
WINE PAIRING
- The salad's flavor is best highlighted when paired with fresh, light wines. Choose white or sparkling wines with juicy acidity.
SALAD INSTRUCTIONS
- 1Cut the tomatoes according to their size – smaller ones (e.g., cherry tomatoes) into halves, larger ones into quarters, sixths, or slices.
- 2Slice the onion very thinly, rinse it in ice water, and let it drain. Roughly chop the parsley.
- 3In a bowl, mix the chopped tomatoes, drained onion, parsley, and salt.
- 4Before serving, pour the dressing over the salad and mix.
DRESSING INSTRUCTIONS
- 1In a bowl, combine the ingredients and whisk them until the sugar dissolves. Whisk the dressing again before serving.
Tip
The prepared dressing will last up to a week in the refrigerator in a sealed container. You can blanch the sliced onion for 5 seconds in boiling water and immediately transfer it to a bowl of ice water to stop it from cooking further. Then let it drain. This will remove its pungent taste.
