INGREDIENTS
- 500 g ground beef (max. 10% fat)
- 130 g zucchini (finely grated)
- 130 g carrot (peeled and finely grated)
- 100 g yellow onion (finely chopped)
- 80 g long grain brown rice, dry
- 10 g fresh flat-leaf parsley (finely chopped)
- 1 teaspoon dried oregano
- 100 ml water
- Salt
- Pepper
INSTRUCTIONS
- 1First, preheat the oven to 195–200 °C and prepare a baking dish measuring 25 cm × 35 cm.
- 2In a large bowl, place the ground meat, zucchini, carrot, onion, rice, salt, pepper, parsley, and oregano. Mix everything thoroughly to create a firm meat mixture and shape it into a loaf approximately 25 cm long. Then transfer it to the prepared baking dish and add water. Place the prepared meatloaf in the preheated oven and bake for 55–60 minutes at 195–200 °C.
- 3After baking, remove the meatloaf from the oven, slice into desired portions, and serve.
