- 600g cod fillets
- 2 eggs
- 3 tablespoons spelt flour
- 100g corn breadcrumbs with flakes
- 1 lemon
- 350g frozen peas
- A small handful of fresh basil leaves
- Rapeseed oil
- Salt
- 800g potatoes

INSTRUCTIONS
- 1Peel the potatoes and cut them into fries. Place them in a pot with hot water, add salt, and cook for 10 minutes on low heat. Drain the fries and let them dry. Then, salt them, drizzle with 1 tablespoon of oil, mix carefully, and transfer to a baking sheet lined with parchment paper. The fries should be spread out to ensure they cook properly.
- 2Clean the fillets, remove the bones with tweezers, and cut them into pieces. Salt them, coat in spelt flour, then in beaten and salted egg, and finally in corn breadcrumbs. Place them on a baking sheet lined with parchment paper.
- 3If you have a convection oven, place both trays in the oven and bake for 20 minutes at 200°C. Turn the fillets halfway through, and stir the fries to ensure they cook evenly on all sides. Remove the fillets and increase the temperature to 220°C, and bake the fries for another 10 minutes. You can stir them once more.
- 4Cook the peas until soft. Then blend them, add salt, chopped basil, and juice from half a lemon.
